Time to restart ( or start ) your Vitamin D supplements

According to Health Canada:
The Adequate Intake (AI) values for vitamin D, as currently expressed in the DRI tables, are as follows:

0-1 year: 200 IU per day
2 -50 years: 200 IU per day
51-70 years: 400 IU per day
> 70 years: 600 IU per day

The Tolerable Upper Level of Intake (UL) for vitamin D for one year old and over is 2000 IU per day.

Water dispenser - back from the dead

One of the best known water specialists in the city declared our dispenser as dead and ready for scrap. We thought otherwise and after a few months of getting various experts to look at it and scratching their heads, we finally found an enterprising electrician who found out what was wrong and fixed it.

Ok. As you can see from the picture, it is not the prettiest chunk of stainless steel to look at but it works better than new! Our water system has been repaired and upgraded at the same time and we are certain we have the best quality water in downtown kitchener.

Filters are changed every six months - more than perhaps, needed, but we want to keep the quality very high. And yes, the price remains at 20 cents per liter.

Why pay $16.00/lb $17.00 or more for stale coffee?

Even though high priced coffee is available at the big coffee/espresso chains, you are most likely buying poor quality coffee. Despite the glossy exotic packaging, you are paying top dollar for stale coffee!

Unless you can be assured that the coffee beans have been roasted just 2 or 3 days ago, even the best coffee beans in the world will be stale by the time they land on the retailers shelf. “Freshness” valves, vacuum packaging, nitrogen flushing will do very little, if anything to slow down the staling process.

Aside from water itself, coffee is the most consumed beverage in the world yet most coffee drinkers know very little about what they are drinking, where it came from or how to prepare it properly.

Coffee plants are often sprayed heavily with pesticides of unknown origin. Chemicals banned in North America may however, not be banned or even regulated in lesser developed countries. To be absolutely sure that you are dinking a chemical free drink make sure the package says "organic" on the package.

In order to have a great cup of coffee, you need freshness.

Freshness is number #1.

There is no way around it. Fresh coffee means coffee that has just been roasted.

The quality of coffee is important of course. You will want to drink only the top 5% of  coffee beans, called specialty grade.
These will be the Arabica variety and come from many different countries – Central America, South America, Africa and Asia. Each of these origins has unique flavours, aromas and tastes.

One of the very best things you can do to improve your overall coffee quality is to grind the beans just before brewing.
You will want a uniform grind using a burr type of coffee grinder. If you do not have a coffee grinder at home, seriously consider buying one.
Make sure you buy an adjustable burr type of coffee grinder and not the ineffective rotary blade type.

The secret of great coffee is very simple – obtain fresh roasted, high quality coffee beans  and grind them just before brewing.
